South Florida Tropicals: Carambola Carambola (Star Fruit) Production… These star shaped fruits give carambola it’s other name, Starfruit, and to see this tree laden with golden stars is a sight to see! The sweet, mildly flavored carambola has two peak harvests each year, Jan/Feb, and Aug./Sept., but there are small quantities available in almost every month of the year.
